I'm not a baker

I've said it many times I'm not a good baker, well because I hate to measure things and I easily substitute things for other things which you know doesn't really work out baking because baking is a science.  Yes, I do have a degree in bio and I should know better when I use bread flour instead of regular flour or think I can get away without that baking powder....but I don't.  I tried to bake these everything bars because they were high calorie and had coconut which I love, but I didn't have all the ingredients and I used things I shouldn't have, so it didn't come out stellar, but it's worth posting a picture of it on here for all my hard work! And I used my mixer for the first time, which was amazing.  The best part of this baking concoction was the coconut over chocolate chips drizzled with condensed milk...the "cookie" part underneath, not all that great, but get a good cookie recipe and put chocolate chips over it, then condensed milk, then coconut and it should be really good!  




On another baking note one of my closest friends in middle school baked something from my blog! Her name is Christie (shout out) and she made the cookie within a cookie! They look super delicious!


And lastly, even though I can't bake, I ordered this cookbook today because it uses sugar and the cover is pretty.  Good reasoning I know!

Minestrone

It's not really spring weather yet in these parts so I was craving some kind of hot soup, but not my usual creamy soups because after all it isn't winter.  I've never made minestrone soup before and I always thought it must be hard so I guess that is why I stayed away from it, but I gave it a try:

You'll need:
1 bay leaf
1 onion
3 cloves of garlic
3 carrots
3 celery
1 zucchini
1 potato
about 4 cups of chicken broth
one can of crushed tomatoes
salt/pepper to taste

First chop up one onion, 3 carrots, 3 celery and zucchini and put them together in your pot with a little olive oil, salt and pepper and let them cook for 10 minutes, chop up your potato and 3 cloves of garlic and add them to your pot, along with your bay leaf and let them cook another 5 or so minutes, adding more olive oil if needed.  Then add your can of crushed tomatoes and about 4 cups of chicken stock and bring to a boil, cook until veggies are to your liking, add salt and pepper to taste.

I cooked my pasta in the soup and I found it sucked up a lot of the stock, so I actually don't advice doing that, I would keep some cooked pasta on the side and add it as you need.  You can also play with this recipe of course, adding more veggies, using veggie stock, etc.

Easter Candy

I'm a candy freak.  I love hard candy, like Ring Pops and lollipops and especially like tart candy like sour patch kids.  I am really thrilled with the new easter candy this year.  My bestie Laura gave me sweet tart jellybeans a few weeks ago and they were delicious! I ate them all.  They had this kind of amazing texture to them, I could not stop eating them! Well yesterday I found sour patch kid jellybeans! AMAZING!

Transplant Thursday

I had a check up Tuesday, I go every three weeks basically so my weight and numbers can be monitored and of course to make sure everything else is my body is working normally for new lungs to come.  The last two weeks I have felt a real decline.  I had a week where I felt good, like I could do a lot of things and it wasn't killing me, and then I hit a wall and it seems like even doing little every day things started to make me really really tired and I was so short of breath.  So it was no surprise that my lung function is down to 24%.  Especially at this point, every 1% you lose is like dying a little more inside - that sentence is dramatic, but I can feel a huge change in little things even from going to 26% to 24%.  My weight was 84 lbs which is terrific, because last time I was 79 lbs.  This is huge huge huge! We're dealing with a few other things right now, I've been getting crazy night sweats and we are just making sure they aren't coming from some underlying infection, because that wouldn't be good for new lungs.  But on Monday they had lungs for me, but for a specific reason that I don't want to announce on here, the hospital ending up having to turn them down.  So, lungs could be coming seriously any day now and I am more and more ready every day that goes by....

Kitchen Secrets

Here is a little kitchen tip for all of you.  Never pour pasta sauce of any kind over the pasta.  Instead make it (or reheat it) in a skillet and toss freshly cooked pasta into it.  Take tongs and take the pasta out of the water it boiled in and toss it i the skillet and let it cook for about one minute while you do this.  This just increases the flavor and makes it more yummy!

Transplant Bag

When you are listed for a transplant you need to be ready to go at any moment, almost like having a baby, so you need to have a bag packed and ready to go because you can't waste any time packing a bag! I have packed my bag and it's interesting how different my first transplant bag is from my bag this time around.  The first time I'm not even truly sure I had a bag! It might have just been my mom that had a bag! By the time I was listed and instructed I was dying, so it didn't really matter (this time has been drastically different) so this time I have packed a bag, and it includes: sweatpants, zip up sweatshirts, a toothbrush, toothpaste, face wipes, dry shampoo, a plug for my phone/ipad, flipcam, shorts, and underwear.  These are all things that I did not have the first time around (well, I had a toothbrush they gave me) but they are things I could have used after a week when I was able to sort of get up on my own, and the gowns that were 4XL were falling off me, and I had no underwear (the whole transplant staff has seem things they shouldn't have ever seen on me!) and my hair was practically it's own entity, and I could have used some lip gloss.  But you know, I may never even use any of these things the entire time, it really just depends how fast I bounce back and when I start to be weaned off of drugs.  I mean when you have a morphine drip going you'll be completely naked in front of a room full of people and think everything is right in the world....because you are drugged up and breathing!

Taste of South End

Last night Laura and I went to my favorite foodie event: The Taste of the South End.  It's expensive but it has the best food ever! We started off with a mini disaster when I forgot my license in my car (that was valeted) because you need your ID.  But it ended up not being necessary when I told the check in person I accidentally left it in my car that was parked who knows where!

There were a lot of people there this year.  Last year I don't remember there being that many people, I didn't really have to get through a crowd to get samples.  This year we did.  But it was well worth it.  We had a definite favorite: the pork belly from Union (in the south end) I went back for more, it was so yummy! I also really loved the steak tartare from both The Butcher Shop and Gaslight.  And B&G Oysters had a really great fried oyster! I have never been to POPS but they had a yummy mini little chicken pot pie which had a really great flavor! Mistral had a really great foi gras (but they had the same exact thing last year, which seemed like lack of creativity to me) and someone also had ceviche on a little chip that was really good, but I can't remember who and someone had a really great mini little crab cake too.....And for dessert The South End Buttery had cupcakes with literally the most amazing butter cream frosting I've ever had.  We ate A LOT of food and it hit us both by the end, we were feeling a little queezy! But it was well worth it.  We'll be back next year for sure, maybe in a suit or a dress (people here were seriously dressed up!)

I did it! Dumplings

I've been wanting to make homemade dumplings for a super long time, because I love them, but them seem like so much work! I found a recipe that I liked over at steamy kitchen (here) and altered it a little bit to my own taste (didn't use pepper or onion and added some fresh lemongrass).


cut up cabbage

grated ginger
cabbage with everything but pork
added pork
work station
mix in wonton wrapper
wontons before cooking
delicious!

Cheesy Biscuits

Who doesn't love cheese, biscuits and bacon? And who doesn't love easy?

These biscuits are so easy.  All you need are: biscuits in those tins that pop (a la pillsbury) mozzarella cheese (either fresh or shredded), bacon, and shredded cheddar cheese.


I put the biscuits in a cast iron pan (preheat oven to 350)


I topped them with shredded mozzarella


And then I put partially cooked (microwaved half way bacon because it will also cooked in the oven) chopped up bacon on top


And lastly I topped with cheddar cheese


I put them in the oven at 350 for about 10 minutes and viola

Ikea Happiness

Lindsey had to go to Ikea yesterday and she pulled my arm (right....) to go with her.  Ikea as overwhelming as it is is a little slice of happiness.  Yes, some of their stuff is crazy cheap and bad quality, but some of their stuff is great and they have lots of little hidden gems too.  We had been in nyc at the doctors all the day before so we were pretty tired but we mustered up the spunk to get there!

A cookie within a cookie

So one of my BFFs came to visit me this weekend (@firstclasspanda), and she never comes empty handed! This time she brought me cookies within a cookie! I've ever seen such a thing before, but what a genius idea! And she backed them all on her own.  They are almost gone now so I wanted to document them before the plate was empty.  There is an Oreo inside these delicious chocolate chip cookies.   


On another note, I had a checkup yesterday and I need to gain like 3 lbs or I am going to need a feeding tube.  So lots of cookies within a cookie are going in my belly!
