Sunday Slow Cooker

I took a Martha Stewart recipe and did a little variation of it (recipe)

My version:
2 red onions sliced
1 bag of frozen peaches
2 tablespoons of fresh minced ginger
2 tablespoons of honey
1/3 cup soy sauce
1 chicken roaster
pureed garlic
2 tablespoons of butter
salt/pepper

I put all of these ingredients (expect the pureed garlic and butter) in the slow cooker.  I covered the chicken with the pureed garlic and butter with salt and pepper.  And let it slow cook for 4 hours.  It was perfection! I butchered the chicken and let it slow cook for another 20 minutes in the sauce.

Biopsy Thursday

I had the lung biopsy yesterday and am waiting for results, which hopefully I should get today! In better news I also got my feeding tube yanked out yesterday, which was not as horrifying as I thought it was going to be! It literally just gets yanked out in an office! I was really nervous about it, but it wasn't too bad!

I'm doing some online retail therapy while I wait for the doctors call...

New Mini Color

Slow Cooker Sunday

10 Hour slow cooker pulled pork I used pork loin but most say to use pork butt or pork shoulder. I smothered it in pureed garlic, salt, pepper, and brown sugar. I put evoo, a splash of rice vinegar, soy sauce and red wine vinegar. I let it cook on high for 3 hours and then I added half a jar of Momofuku braising sauce (from Williams Sonoma) and continued to slow cook on low for 6 more hours. I then shredded it up by simply pulling it apart, added a little more sauce and mixed it up. This was amazing!
